Enter product: Tofu Shirataki
Weighing in only at 40 calories per packet. 6g of carbs, 4g of fiber, and 2g protein (*gasp*). These tofu noodles are a Japanese invention that come in various shapes and sizes. The type I buy in Chicago are by House Foods America and can be found at Korean super grocer Hmart in Niles, select grocery stores, online, and some Whole Food stores.
What it is: A noodle made of tofu and yam. It can be used in soups, stir-fries, and as a pasta replacement. Chinese people LOVE this in our hot pot (kinda like a brothy fondue where you dunk veggies and meat into)!
What it tastes like: Honestly, nothing like your traditional pasta. It is close to tasteless, and if you make your noodles in sauce, it will taste just like the sauce.
Texture: A little bit chewy (not too much chewy work), a tiny bit of crunch, smooth and silky in your mouth
